- 1/2 tsp natural gelling agent
Glaze Ingredients
- 1 cup powdered sugar (natural)
- 2–3 tbsp plant-based milk
- 1 tsp vanilla extract (natural)
Instructions
- Prepare the Dough: Warm the plant-based milk until lukewarm and dissolve the active dry yeast in it with 1 tbsp natural brown sugar. Let it sit for 5 to 7 minutes until bubbly. In a large bowl, combine the flour, salt, and plant-based butter cut into small pieces. Slowly add the yeast mixture and vanilla extract, then knead until the dough is soft and elastic. Cover and let it rise in a warm place until doubled in size, about 1 hour.
- Make the Apple Filling: Peel, core, and finely chop the apples. In a skillet, melt plant-based butter, then add apples, cinnamon, remaining natural brown sugar, and a splash of vegetarian Worcestershire sauce. Cook gently until the apples are tender but not mushy, about 5-7 minutes. Stir in the natural gelling agent to help thicken and set the filling. Remove from heat and let cool.
- Assemble the Rolls: Roll the risen dough out on a lightly floured surface into a rectangle about 1/4 inch thick. Spread the cooled apple filling evenly over the dough, leaving a small border around the edges. Starting from the longer side, carefully roll the dough into a tight log. Cut into even slices about 1.5 inches thick and place them into a greased baking pan with space to rise.
- Second Rise and Bake: Cover the rolls and let them rise again for 30 to 40 minutes until puffy. Preheat the oven to 375°F (190°C). Bake the rolls for 20 to 25 minutes until golden brown and cooked through. Remove from the oven and cool slightly.
- Prepare the Glaze and Serve: Mix powdered sugar with 2 to 3 tbsp plant-based milk and vanilla extract to create a smooth glaze. Drizzle generously over the warm rolls for the perfect finish.
