Description

This easy Baked Mac and Cheese combines creamy plant-based cheese sauce with savory smoked turkey bacon and a subtle tang from apple cider vinegar (natural). Perfectly baked to a golden crust, this comforting and flavorful dish is ideal for cozy family dinners or a satisfying lunch.

Ingredients

Scale

Pasta

  • 2 cups elbow macaroni

Cheese Sauce

  • 2 cups plant-based cheese (shredded)
  • 2 cups plant-based milk
  • 2 tablespoons plant-based butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon apple cider vinegar (natural)
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Protein

  • 4 slices smoked turkey bacon, chopped

Toppings (Optional)

  • 1/2 cup breadcrumbs

Instructions

  1. Cook the Pasta: Start by boiling the elbow macaroni in salted water until just al dente. Drain and set aside to prepare the cheese sauce.
  2. Prepare the Smoked Turkey Bacon: While the pasta cooks, chop the smoked turkey bacon into bite-size pieces and cook in a skillet over medium heat until crispy. Remove from heat and set aside.
  3. Make the Cheese Sauce: In a saucepan, melt the plant-based butter over medium heat. Whisk in the flour and cook for about one minute until bubbly to form a roux. Gradually add the plant-based milk while whisking constantly to avoid lumps, and continue cooking until thickened. Stir in the plant-based cheese until melted and smooth.
  4. Add Seasonings and Vinegar: Mix in the apple cider vinegar (natural), mustard powder, garlic powder, onion powder, salt, and pepper to create a flavorful cheese sauce with a perfect tangy hint.
  5. Combine Pasta and Bacon with Cheese Sauce: Fold the cooked pasta and smoked turkey bacon into the cheese sauce, ensuring every piece is well coated.
  6. Bake to Perfection: Transfer the cheesy mixture into a baking dish. Sprinkle breadcrumbs evenly on top for a crunchy finish. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until the top is golden brown and bubbly.

Notes

  • Constantly whisk the sauce to avoid lumps and ensure smooth creaminess.
  • Use panko breadcrumbs for an extra crispy topping.
  • Choose a plant-based cheese that melts well for the best sauce consistency.
  • Slightly undercook noodles as they will continue cooking in the oven.
  • Let the baked mac and cheese rest for a few minutes before serving to set and allow cleaner slices.
