Instructions

  1. Prepare the Blueberry Swirl: Gently heat fresh blueberries in a small saucepan with lemon juice (natural) and honey (natural). Simmer until the berries soften and release their juices. Stir in the natural gelling agent while the mixture thickens slightly. Allow to cool completely.
  2. Mix the Yogurt Base: In a bowl, combine plant-based yogurt with vanilla extract (natural) and honey (natural). Whisk gently until smooth and creamy to create the yogurt base.
  3. Create the Swirls: Alternately layer the yogurt mixture and the cooled blueberry swirl into silicone molds or ice cube trays. Use a skewer or toothpick to gently swirl the blueberry mixture through the yogurt for a marbled effect.
  4. Freeze Until Firm: Place the molds in the freezer and let the bites set completely, about 4 to 6 hours or overnight for best results. Once frozen, remove the bites and store them in an airtight container in the freezer.
