Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon natural gelling agent
  • 1 tablespoon baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup plant-based buttermilk
  • 3 tablespoons plant-based butter, melted

Additional Ingredients

  • Oil for frying (vegetable or other neutral oil)
  • Powdered sugar (plant-based), for dusting
  • Optional: 1 teaspoon vegetarian Worcestershire sauce (natural) for creative variations

Instructions

  1. Prepare the Dough: Combine the all-purpose flour, baking powder, natural gelling agent, sugar, and salt in a large bowl. In a separate container, whisk together the plant-based buttermilk and melted plant-based butter. Slowly pour the wet mixture into the dry ingredients, stirring gently until a soft and slightly sticky dough forms.
  2. Roll and Cut: Lightly flour a clean surface and roll the dough out to about a quarter-inch thickness. Using a sharp knife or square cutter, cut the dough into even squares or rectangles, approximately 2 to 3 inches wide, forming the iconic beignet shapes.
  3. Heat the Oil: Pour oil into a deep frying pan or pot and heat over medium heat to around 350°F (175°C). Maintaining this temperature allows the beignets to cook evenly and prevents excess oil absorption.
  4. Fry the Beignets: Carefully place the cut dough pieces into the hot oil in small batches to avoid overcrowding. Fry each side for 2 to 3 minutes until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.
  5. Dust and Serve: Allow the beignets to cool slightly but remain warm. Generously dust each with plant-based powdered sugar for the classic finishing touch and serve immediately for the best texture and flavor.

Notes

  • Keep frying oil temperature steady at 350°F for optimal results.
  • Fry in small batches to maintain crispiness and prevent sogginess.
  • Use fresh oil for a cleaner taste and better texture.
  • Roll dough evenly to ensure uniform cooking.
  • Serve beignets warm to enjoy maximum fluffiness and crunch.
