  • Yield: 6-8 pockets

Description

These easy Cheesy Pizza Pockets are a quick, comforting, and irresistibly gooey meal made with melted (plant-based) cheese and your favorite fillings wrapped in a golden, crispy crust. Perfect for lunch, snacks, or feeding a crowd, they offer classic pizza flavors in a portable and satisfying form that can be personalized with veggies, proteins, and spices.

Ingredients

Dough and Crust

  • Pizza Dough (store-bought or homemade)
  • Olive Oil (for brushing)

Fillings

  • Tomato Sauce (natural) – about 1/2 cup
  • (Plant-Based) Cheese – 1 to 1 1/2 cups shredded or sliced
  • Vegetarian Worcestershire Sauce – 1 tablespoon
  • Vegetables (choose any or a combination): bell peppers (1/2 cup diced), onions (1/2 cup diced), olives (1/4 cup sliced), spinach (1 cup fresh)
  • Cooked Protein (e.g., shredded chicken or plant-based sausage) – 1 cup
  • Herbs and Spices: 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon garlic powder, 1/4 teaspoon crushed red pepper flakes (optional)
  • Natural Gelling Agent – 1/2 teaspoon (to help keep filling moist and intact)

Instructions

  1. Prepare Your Filling: In a mixing bowl, combine the tomato sauce (natural), diced vegetables, cooked protein, vegetarian Worcestershire sauce, herbs, spices, and natural gelling agent. Stir well to blend all flavors evenly and keep the mixture moist but firm for baking.
  2. Roll Out the Dough: On a lightly floured surface, roll out the pizza dough into a rectangle or circle shape, keeping it thin enough to crisp but thick enough to hold fillings without tearing.
  3. Assemble the Pockets: Spoon generous portions of the filling onto half of the rolled dough, leaving space around the edges. Add a heaping amount of (plant-based) cheese on top of each filling portion. Fold the other half of the dough over to cover and press the edges firmly with a fork to seal well.
  4. Brush and Bake: Brush the tops of the pockets with olive oil to achieve a golden, crispy finish. Arrange them on a baking sheet lined with parchment paper and bake at 200°C (400°F) for 15 to 20 minutes until golden brown and the cheese is melted and bubbly.
  5. Cool and Enjoy: Let the pockets cool slightly to avoid burning your mouth, then serve warm and enjoy the gooey, savory goodness.

Notes

  • Spread filling in small mounds for consistent topping distribution.
  • Seal pocket edges well using a fork and a little water to prevent leaks.
  • Choose quality (plant-based) cheese for optimal meltiness and texture.
  • Avoid overfilling the pockets to prevent bursting during baking.
  • Ensure oven temperature is correct to get a crispy crust with melted cheese without drying out the pockets.
