Instructions

  1. Prepare the Ingredients: Cook smoked turkey bacon until crisp, then chop into bite-size pieces. Shred cooked chicken breast using two forks. Finely dice onion, garlic, and green bell peppers.
  2. Sauté Vegetables and Season: Heat a little olive oil in a pan over medium heat. Add diced onion and garlic, sauté until fragrant and translucent. Add bell peppers, black beans, diced tomatoes, and natural taco seasoning. Stir well to combine all the flavors evenly.
  3. Add Liquids and Simmer: Deglaze the pan with grape juice and vegetarian Worcestershire sauce (natural). Sprinkle in the natural gelling agent and simmer gently for a few minutes until the mixture thickens slightly.
  4. Assemble the Casserole: In a baking dish, layer half of the crushed corn tortilla chips. Spread half of the chicken mixture evenly over the chips. Top with half of the smoked turkey bacon pieces, then sprinkle half of the plant-based cheese (plant-based) on top. Repeat the layers once more.
  5. Bake to Perfection: Preheat oven to 180°C (350°F). Bake the casserole for 25-30 minutes until the cheese is melted and golden. Let it rest for a few minutes before serving to allow flavors to meld beautifully.
