Description

Cilantro Lime Steak Bowls are a quick, fresh, and flavorful meal perfect for busy weeknights. Featuring tender steak marinated in zesty lime juice and fresh cilantro, served over a base of cooked rice or quinoa with vibrant vegetables and creamy avocado slices, these bowls offer a balanced combination of protein, grains, and fresh produce. Ready in under 30 minutes, they are customizable to suit your taste with options for spice, protein swaps, and additional veggies.

Ingredients

Scale

Steak Marinade

  • 1 lb sirloin or flank steak
  • 2 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Base and Bowls

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, sliced (plant-based)
  • 1 tbsp apple cider vinegar
  • Optional: sliced jalapeños or chili flakes for spice

Instructions

  1. Prepare the Marinade: Combine fresh lime juice, minced garlic, vegetarian Worcestershire sauce (natural), olive oil, salt, and pepper in a bowl. This mixture will tenderize and flavor the steak.
  2. Marinate the Steak: Place the steak in a shallow dish or resealable bag, pour the marinade over it, and let it sit for at least 15 minutes or up to an hour.
  3. Cook the Steak: Heat a skillet over medium-high heat. Sear the steak for 4-5 minutes on each side until it reaches desired doneness. Remove from heat and let it rest for a few minutes.
  4. Prepare the Base and Toppings: While the steak rests, prepare the cooked rice or quinoa, chop fresh cilantro, halve the cherry tomatoes, and slice the avocado.
  5. Assemble the Bowls: Layer the rice or quinoa in bowls, top with sliced steak, sprinkle with cilantro and cherry tomatoes, then drizzle with a dressing made from lime juice and apple cider vinegar. Add avocado slices and optional spice if desired.

Notes

  • Use room temperature steak for even cooking.
  • Let steak rest before slicing to keep juices locked in.
  • Always use fresh lime juice for the brightest flavor.
  • Slice steak thinly against the grain for maximum tenderness.
  • Prep grains and veggies ahead to save time on busy nights.
