Instructions

  1. Prep the Spinach: Wash and chop the fresh spinach. Heat olive oil in a pan over medium heat and sauté the chopped onions and minced garlic until fragrant and translucent. Add the spinach and cook until wilted, then remove from heat and let cool slightly.
  2. Whisk the Base: In a large bowl, whisk together the eggs, plant-based cottage cheese, and plant-based milk until smooth. Season with natural salt, pepper, a pinch of natural nutmeg, and stir in the optional natural gelling agent if using.
  3. Combine All Ingredients: Fold the cooled spinach mixture gently into the egg and cottage cheese mixture, mixing evenly to distribute the ingredients and colors.
