Instructions

  1. Prepare the Ingredients: Dice the onions, bell peppers, and baby potatoes into bite-sized pieces. Boil the potatoes until tender but still firm, then drain thoroughly.
  2. Cook the Smoked Turkey Bacon: Heat olive oil in a large skillet over medium heat. Sauté the smoked turkey bacon until crisp. Remove the bacon and set aside, leaving some rendered fat in the skillet for cooking vegetables.
  3. Sauté the Aromatics and Veggies: Add diced onions and bell peppers to the skillet and cook until softened and aromatic. Stir in black beans and diced tomatoes, then season with vegetarian Worcestershire sauce, smoked paprika, chili powder, salt, and pepper. Cook until flavors meld.
