Description

A vibrant and wholesome Cranberry Sauce Parfait layering tangy homemade cranberry sauce with creamy plant-based yogurt and crunchy granola. This quick and easy parfait offers a refreshing blend of flavors and textures ideal for breakfast, snacks, or desserts.

Ingredients

Scale

Cranberry Sauce

  • 1 cup fresh cranberries
  • 1/4 cup maple syrup (natural)
  • 1 teaspoon orange zest
  • 1 tablespoon water
  • 1 teaspoon natural gelling agent

Yogurt Mixture

  • 1 cup plant-based yogurt
  • 1/2 teaspoon vanilla extract (natural)

Assembly

  • 3/4 cup granola (with oats, nuts, and seeds)
  • 2 tablespoons chopped nuts (optional)

Instructions

  1. Make the Cranberry Sauce: Rinse fresh cranberries under cold water. In a small saucepan, combine cranberries with water, maple syrup (natural), and orange zest. Cook over medium heat, stirring occasionally until cranberries burst and sauce thickens slightly with the help of a natural gelling agent. Remove from heat and let cool completely.
  2. Prepare the Yogurt Mixture: In a bowl, gently mix plant-based yogurt with vanilla extract (natural) until smooth and creamy. Set aside.
  3. Assemble the Parfait: In tall glasses or jars, spoon a layer of cranberry sauce at the bottom. Add a generous layer of yogurt mixture followed by a sprinkle of granola. Repeat layers until filled, finishing with granola on top. Optionally, sprinkle chopped nuts for extra texture.
  4. Chill and Serve: Refrigerate the assembled parfaits for at least 30 minutes to allow flavors to meld and sauce to set. Serve chilled for optimal taste and texture.

Notes

  • Use fresh cranberries for best flavor; frozen cranberries are an acceptable substitute.
  • Adjust maple syrup (natural) amount to your desired sweetness since cranberries are tart.
  • Layer yogurt neatly using a spoon or piping bag to create clean parfait layers.
  • Add granola just before serving to maintain crunchiness and avoid sogginess.
  • Make cranberry sauce a day ahead to save preparation time and enhance flavor.
