Description

Creamy Marry Me Tofu with Sun-Dried Tomatoes is a comforting plant-based dish blending rich creaminess and vibrant sun-dried tomato flavors. Featuring extra-firm tofu, luscious plant-based cream, and savory smoked turkey bacon, this quick and nutritious meal is perfect for family dinners or impressing guests with its indulgent yet wholesome taste.

Ingredients

Scale

Tofu and Protein

  • 400g extra-firm tofu, pressed and cubed
  • 100g smoked turkey bacon, chopped

Vegetables and Herbs

  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach leaves
  • 2 garlic cloves, finely chopped
  • 1/4 cup fresh basil leaves, chopped

Liquids and Sauces

  • 3/4 cup plant-based cream
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)
  • 1 tablespoon olive oil

Other

  • Pinch of natural gelling agent (optional, to thicken sauce)

Instructions

  1. Prepare the Tofu: Start by pressing extra-firm tofu to remove excess moisture for about 15 minutes. Then, cut it into bite-sized cubes that will soak up all the delicious sauce during cooking.
  2. Cook the Smoked Turkey Bacon: In a large skillet over medium heat, crisp the smoked turkey bacon pieces until golden and slightly crunchy. Remove and set aside while keeping the rendered fat in the pan for added flavor.
  3. Sauté Aromatics and Sun-Dried Tomatoes: Using the bacon fat and a drizzle of olive oil, sauté finely chopped garlic until fragrant. Toss in chopped sun-dried tomatoes and cook for a few minutes to soften and release their rich, tangy essence.
  4. Create the Creamy Sauce: Add the plant-based cream and a splash of vegetarian Worcestershire sauce (natural) along with apple cider vinegar (natural) to the pan. Stir well and allow the mixture to simmer gently, thickening with a pinch of natural gelling agent if desired.
  5. Combine Tofu and Greens: Gently fold in the tofu cubes and fresh spinach leaves, letting the spinach wilt in the warm sauce. Return the smoked turkey bacon to the pan, stirring everything together to fully combine flavors.
  6. Finish with Fresh Herbs: Remove from heat and sprinkle chopped fresh basil over the top for a bright, herbaceous finish. Serve immediately for best results.

Notes

  • Press your tofu well to remove moisture completely for crisp edges and fuller flavor absorption.
  • Do not skip the smoked turkey bacon as it adds a smoky umami note that elevates the dish.
  • Choose sun-dried tomatoes packed in olive oil for a sweeter, richer taste and better texture.
  • Simmer the sauce gently on low heat to prevent curdling or breaking of the plant-based cream.
  • Use a small amount of natural gelling agent to adjust sauce thickness as desired.
