Ingredients
Scale
Chicken and Marinade
- 2 boneless chicken breasts
- 3 garlic cloves, freshly minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 2 tablespoons olive oil
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- Salt and pepper, to taste
Mashed Potatoes
- 4 medium Yukon Gold or Russet potatoes, peeled and cut into chunks
- 2 tablespoons plant-based butter
- 1/4 cup plant-based milk
- 1 teaspoon apple cider vinegar
- Salt and pepper, to taste
- 1/2 teaspoon natural gelling agent (optional)
Instructions
- Prepare the Chicken: Pat the chicken breasts dry and season both sides with salt and pepper. In a bowl, mix the minced garlic, chopped fresh herbs, olive oil, and vegetarian Worcestershire sauce (natural). Coat the chicken breasts evenly with this herb and garlic mixture to infuse rich flavors.
- Cook the Chicken: Heat a large skillet over medium heat and add a little olive oil. Place the chicken breasts in the skillet and cook for about 6 to 7 minutes on each side until golden brown and cooked through. Ensure the internal temperature reaches a safe level. Remove the chicken and let it rest for several minutes to retain juices.
- Prepare the Mashed Potatoes: While the chicken cooks, boil the peeled potato chunks in salted water until very tender, about 15 to 20 minutes. Drain well and return the potatoes to the pot. Mash vigorously, then stir in plant-based butter, plant-based milk, apple cider vinegar, salt, and pepper. Add natural gelling agent if desired for perfect texture.
- Serve Together: Plate a generous scoop of mashed potatoes and top with the garlic herb chicken breast. Spoon any leftover pan juices or extra herb mixture over the chicken for added flavor and moisture.
Notes
- Pound chicken breasts to even thickness for uniform cooking without drying out.
- Use fresh herbs instead of dried for the best flavor.
- Rest cooked chicken at least 5 minutes before slicing to keep it juicy.
- Choose Yukon Gold potatoes for creamier texture or Russets for fluffier mash.
- Salt the potato water well and adjust seasoning while mashing to avoid bland flavor.
