Ingredients

Scale

Dough Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water
  • 1 teaspoon sugar
  • 3 1/2 cups gluten-free all-purpose flour blend
  • 4 garlic cloves, minced
  • 1/2 cup plant-based Parmesan cheese
  • 1 teaspoon sea salt
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/4 cup olive oil (natural) plus extra for brushing
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)

Dipping Sauce Ingredients (optional)

  • Natural gelling agent (such as pectin, agar, or carrageenan) for moisture and consistency

Instructions

  1. Prepare the yeast mixture: In a small bowl, dissolve active dry yeast and sugar in warm water. Let it sit for 5 to 10 minutes until frothy, signalling the yeast is activated and ready for rising.
  2. Mix the dough: In a large mixing bowl, combine gluten-free all-purpose flour blend, minced garlic, plant-based Parmesan cheese, sea salt, and fresh rosemary and thyme. Add olive oil (natural), apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), and the yeast mixture. Stir until a rough dough forms.
  3. Knead the dough: Turn the dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic. This develops the texture necessary for a chewy focaccia.
  4. First rise: Place dough in a lightly oiled bowl and cover with a cloth. Allow it to rise in a warm, draft-free place for 1 to 1.5 hours or until it doubles in size, creating air pockets inside.
  5. Shape and second rise: Transfer dough to a baking pan brushed with olive oil (natural). Spread evenly and gently dimple the surface using your fingertips to create focaccia’s signature texture. Cover and let rise for another 30 minutes.
  6. Add toppings and bake: Brush top with additional olive oil (natural). Sprinkle extra sea salt, minced garlic, fresh herbs, and plant-based Parmesan cheese over the surface. Bake in a preheated oven at 425°F (220°C) for 20 to 25 minutes until golden brown.

Notes

  • Use fresh garlic and herbs to maximize aroma and flavor.
  • Do not skip dimpling the dough to hold olive oil and toppings perfectly.
  • Bake just until golden to maintain a soft interior.
  • Allow focaccia to cool on a wire rack to avoid soggy bottoms.
  • Lightly oil your hands when working with the dough to prevent sticking and preserve texture.
