A fresh and vibrant Grilled Salmon Cobb Salad with smoked turkey bacon, mixed greens, shredded mozzarella cheese (vegetal), and a tangy homemade mustard vinaigrette. This salad combines bold flavors and textures for a healthy, nourishing meal perfect for lunch or dinner.

Ingredients

Scale

Salmon and Protein

  • 4 fresh salmon fillets, skin-on
  • 6 strips smoked turkey bacon
  • 4 hard-boiled eggs, quartered

Salad Base

  • 4 cups mixed salad greens (lettuce, arugula, baby spinach)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup shredded mozzarella cheese (vegetal)

Mustard Vinaigrette

  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Salmon: Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Heat grill or grill pan to medium-high heat. Grill salmon for 4-5 minutes per side until opaque and flaky. Remove and let rest.
  2. Cook the Smoked Turkey Bacon: In a skillet over medium heat, cook smoked turkey bacon strips until crispy. Drain on paper towels and set aside.
  3. Make the Mustard Vinaigrette: In a small bowl, whisk together Dijon mustard, apple cider vinegar, honey, minced garlic, salt, pepper, and olive oil. Adjust sweetness or acidity as desired.
  4. Assemble the Salad Base: On a large platter or bowl, layer mixed salad greens, halved cherry tomatoes, sliced avocado, quartered hard-boiled eggs, and shredded mozzarella cheese (vegetal).
  5. Add Protein and Finish: Place grilled salmon fillets and crispy smoked turkey bacon strips over the salad. Drizzle generously with mustard vinaigrette just before serving.

Notes

  • Use fresh, high-quality salmon for best flavor and even grilling.
  • Add vinaigrette gradually to prevent soggy greens.
  • Let grilled salmon rest to retain moisture and texture.
  • Ensure smoked turkey bacon is crispy to add a crunchy contrast.
  • Prep ingredients like chopping veggies, boiling eggs, and making dressing ahead to speed assembly.
