- Prepare the Ganache: Chop the dark chocolate finely and place it in a heatproof bowl. Warm the plant-based cream gently over low heat until it starts to steam but does not boil. Pour the warm cream over the chocolate and let it sit for a minute to soften. Then, stir thoroughly until you get a glossy, smooth mixture.
- Add Flavor and Sweetness: Mix in the maple syrup (natural) and vanilla extract (natural) to the ganache. Stir until well combined. If using any natural gelling agent, incorporate it now and mix until perfectly dissolved to set the texture.
- Chill the Mixture: Cover the bowl with cling film and refrigerate for at least 2 hours or until the ganache is firm enough to shape comfortably.
- Shape the Truffles: Using a small spoon or melon baller, scoop out portions of the chilled ganache and quickly roll them between your palms to form smooth balls. Place the truffles on a parchment-lined tray.
- Coat and Finish: Roll each truffle in cocoa powder (natural) or your preferred coating, then set them back on the tray. Chill again for about 30 minutes to firm up, then enjoy!
