Description

Pimiento Corn Muffins combine the sweet creaminess of cornmeal with the vibrant, slightly sweet flavor of pimiento peppers and the smoky savory notes of smoked turkey bacon and plant-based cheese. These moist, tender muffins with a fluffy crumb make a versatile side or snack that stays fresh for days and offers delightful pockets of melted plant-based cheese in each bite.

Ingredients

Scale

Dry Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon natural baking powder
  • 1/2 teaspoon natural salt
  • 1 tablespoon natural sugar

Wet Ingredients

  • 1 cup plant-based milk
  • 1/4 cup vegetable oil
  • 1 tablespoon apple cider vinegar (natural)
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon natural gelling agent

Additional Ingredients

  • 1/2 cup chopped smoked turkey bacon
  • 1/3 cup diced pimiento peppers
  • 1/2 cup cubed plant-based cheese

Instructions

  1. Prepare the Smoked Turkey Bacon and Pimientos: Cook the smoked turkey bacon in a skillet over medium heat until crisp. Drain and chop into bite-sized pieces. Roughly chop the pimiento peppers and set both aside to mix into the batter later.
  2. Mix the Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, natural baking powder, natural salt, and natural sugar. Whisk until evenly distributed to help the muffins rise and bake uniformly.
  3. Combine Wet Ingredients Separately: In another bowl, whisk together the plant-based milk, vegetable oil, apple cider vinegar (natural), and vegetarian Worcestershire sauce (natural). Stir in the natural gelling agent until fully dissolved for added moisture and tenderness.
  4. Bring Wet and Dry Together: Pour the wet ingredients into the dry mixture and gently fold with a spatula. Stir just until the batter comes together, creating a slightly lumpy but well-moistened dough. Avoid overmixing.
  5. Add Cheese, Bacon, and Pimientos: Fold in the chopped smoked turkey bacon, diced pimiento peppers, and cubed plant-based cheese evenly throughout the batter for a balanced flavor in every muffin.
  6. Bake Until Golden and Fluffy: Spoon the batter into a greased muffin tin, filling each cup about three-quarters full. Bake in a preheated oven at 375°F (190°C) for 18-22 minutes or until a toothpick inserted comes out clean and the muffin tops are golden brown.

Notes

  • Don’t overmix the batter to keep muffins light and fluffy.
  • Use fresh pimiento peppers and plant-based cheese for the best flavor.
  • Ensure the oven is fully preheated to avoid dense muffins.
  • Grease the muffin tin well or use paper liners to prevent sticking.
  • Including natural sugar balances the savory flavors perfectly.
