Ingredients
Scale
Cookie Dough
- 2 1/2 cups all-purpose flour
- 3/4 cup plant-based butter, softened
- 3/4 cup granulated sugar
- 1 teaspoon natural vanilla extract
- 2 tablespoons plant-based milk
- 1 teaspoon baking powder
Icing and Decoration
- 2 cups powdered sugar (plant-based)
- 2–4 tablespoons plant-based milk
- 1/2 teaspoon natural gelling agent
- Natural fruit juices and plant-based colorings (strawberry, mango, blueberry, etc.)
- Vegetarian Worcestershire sauce (natural), optional for glazed versions
Instructions
- Prepare the Dough: In a large mixing bowl, cream the plant-based butter and granulated sugar until light and fluffy. Slowly add the natural vanilla extract and plant-based milk, blending well. Gradually sift in the all-purpose flour and baking powder for even incorporation. Mix until the dough comes together, forming a smooth ball ready to chill.
- Chill the Dough: Wrap the dough in cling film and refrigerate for at least 1 hour. Chilling ensures the dough firms up, making it easier to roll and cut into shapes while helping the cookies maintain their form during baking.
- Roll and Cut Shapes: Lightly flour your work surface and roll the dough evenly to about one-quarter inch thickness. Use cookie cutters in fun summer-themed shapes like suns, flowers, or fruit slices to cut out the cookies. Transfer them carefully onto a baking sheet lined with parchment paper.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Bake cookies for 10 to 12 minutes or until the edges turn golden brown. Remove from oven and allow cooling completely on a wire rack before decorating.
- Prepare the Icing: Mix powdered sugar (plant-based) with a few drops of plant-based milk and a pinch of natural gelling agent until smooth and thick enough to spread. Divide into separate bowls to add natural fruit juice colorings, creating your palette for decorating fun designs.
- Decorate Your Cookies: Use small spatulas or piping bags to apply colorful icing to your cookies. Let your creativity shine by layering colors, adding dots, swirls, or summer-inspired motifs. Allow the icing to set fully for about 2 hours.
Notes
- Chill the dough properly to prevent spreading during baking.
- Use quality natural colorings like fresh fruit juices or plant-based colorings for vibrant, clean hues.
- Work with cool hands or use tools to prevent dough softening while cutting shapes.
- Adjust the powdered sugar and plant-based milk ratio to achieve desired icing consistency for piping or spreading.
- Allow decorated cookies to dry fully on a rack to avoid smudging designs.
