This hearty recipe delivers a luscious texture and bold flavors, perfect for family dinners or cozy nights at home.

Ingredients

Scale

Chicken

  • 4 tender boneless, skinless chicken breasts

Meat

  • 6 slices smoky turkey bacon

Cheese

  • 1 cup plant-based cheese, shredded or sliced

Vegetables

  • 1 medium onion, diced
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, freshly minced

Sauce

  • 2 tablespoons plant-based butter
  • 2 tablespoons all-purpose flour (or gluten-free flour blend)
  • 1 cup chicken broth
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar (natural)
  • 1/4 teaspoon natural gelling agent
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry and season generously with salt, black pepper, and smoked paprika to lock in flavor and achieve a golden crust when cooked.
  2. Cook the Turkey Bacon: In a large skillet over medium heat, cook the smoky turkey bacon until crisp. Remove and set aside, leaving some rendered flavor in the pan for cooking vegetables.
  3. Sauté the Vegetables: Add plant-based butter to the skillet, then sauté onions and garlic until translucent and fragrant. Add mushrooms and cook until tender and golden, stirring occasionally to prevent burning.
  4. Make the Smothering Sauce: Sprinkle flour evenly over the vegetables and stir continuously to form a roux that absorbs the butter and pan juices. Slowly pour in chicken broth and vegetarian Worcestershire sauce (natural), stirring constantly to avoid lumps. Add apple cider vinegar (natural) and natural gelling agent. Simmer until the sauce thickens slightly.
  5. Cook the Chicken in Sauce: Return the chicken breasts to the pan and spoon sauce over them. Cover and simmer on low heat for about 15 minutes, or until chicken is cooked through and tender.
  6. Add Cheese and Bacon: Sprinkle plant-based cheese over the chicken and scatter the crumbled turkey bacon on top. Cover briefly to allow the cheese to melt perfectly into the sauce and chicken.

Notes

  • Pound chicken breasts to an even thickness for consistent cooking.
  • Be patient while making the sauce to ensure a smooth, thickened texture.
  • Use fresh mushrooms and onions for sweeter, richer flavor.
  • Simmer chicken gently on low heat to keep it juicy and tender.
  • Let chicken rest a few minutes after cooking to seal in juices.
