Ready in under 30 minutes, this one-pan recipe offers bold flavors, customizable heat, and a wholesome, colorful meal perfect for any occasion.

Ingredients

Scale

Noodles and Protein

  • 8 oz wide rice noodles (fresh or dried)
  • 4 strips smoked turkey bacon, chopped

Vegetables

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 garlic cloves, minced
  • 3 green onions, sliced
  • 1 cup fresh Thai basil leaves (plant-based)

Sauces and Seasonings

  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp soy sauce (natural)
  • 2 tbsp grape juice
  • 1 tsp chili flakes (adjust to taste)
  • 1 tbsp cooking oil

Instructions

  1. Prepare the Noodles: Soak or boil the rice noodles until tender but still firm to the bite. Drain well and set aside, separating them to prevent clumping.
  2. Cook the Smoked Turkey Bacon: Heat a large pan over medium heat. Add the smoked turkey bacon strips and cook until crispy and aromatic. Remove from pan and chop into bite-sized pieces.
  3. Sauté Aromatics and Vegetables: In the same pan, add cooking oil. Toss in minced garlic followed by sliced bell peppers and green onions. Stir frequently until vegetables soften slightly but retain their crunch and vibrant colors.
  4. Combine Ingredients with Sauce: Return chopped smoked turkey bacon to the pan. Add the cooked noodles. Pour in the vegetarian Worcestershire sauce (natural), soy sauce (natural), and grape juice. Toss everything together to coat evenly and allow the noodles to absorb flavors.
  5. Finish with Thai Basil and Seasoning: Turn off heat and gently fold in fresh Thai basil leaves and chili flakes to infuse herbal aroma and desired spice. Serve immediately for optimal texture and flavor.

Notes

  • Use fresh or evaporated rice noodles for the best chewy texture and flavor absorption.
  • Add chili flakes gradually to customize spice levels.
  • Sauté bell peppers briefly to keep them crisp and colorful.
  • Pre-mix sauces in advance for even coating and flavor integration.
  • Toss noodles gently before serving to prevent clumping.
