Experience a comforting blend of fresh herbs, spices, and tender potstickers in this Thai Potsticker Soup. Featuring a fragrant broth infused with lemongrass, ginger, and garlic, this soup delivers rich, nourishing flavors with every bowl. Perfect for quick weeknight dinners or cozy chilly evenings, it offers a delightful balance of savory, citrusy, and slightly sweet notes enhanced by vibrant fresh herbs and a touch of heat.

Ingredients

Scale

Potstickers

  • 12 fresh vegetable or chicken-filled potstickers

Broth

  • 4 cups vegetable broth
  • 2 lemongrass stalks, bruised
  • 4 thin slices fresh ginger
  • 3 garlic cloves, crushed
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1/4 cup grape juice
  • 2 tbsp fresh lime juice

Fresh herbs and vegetables

  • 1/4 cup fresh cilantro, roughly chopped
  • 1/4 cup fresh Thai basil, roughly chopped
  • 3 green onions, sliced
  • Red chili slices, optional, to taste

Instructions

  1. Prepare the Broth: In a large pot, bring vegetable broth to a gentle simmer over medium heat. Add the bruised lemongrass stalks, thinly sliced ginger, and crushed garlic cloves to infuse the broth with aromatic layers. Let simmer for about 10 minutes.
  2. Add Seasonings: Stir in the vegetarian Worcestershire sauce (natural) and grape juice to add complexity and subtle sweetness. Finish by mixing in freshly squeezed lime juice to brighten and balance the flavors.
  3. Cook the Potstickers: Gently add potstickers to the simmering broth. Cook according to package instructions or until they float and the filling is tender, usually about 6 to 8 minutes.
  4. Add Fresh Herbs and Veggies: Once the potstickers are cooked, add sliced green onions, fresh cilantro, and Thai basil to the pot. Optionally add red chili slices for heat. Allow herbs to wilt slightly while retaining brightness.
  5. Serve Hot: Ladle soup into bowls ensuring each serving contains several potstickers, plenty of broth, and fresh herbs. Garnish with extra cilantro, green onions, and chili slices as desired.

Notes

  • Add fresh herbs at the end of cooking to maintain their bright flavor.
  • Simmer broth gently to cook potstickers evenly without breaking them.
  • Finely chopping herbs distributes their aroma throughout the soup.
  • Taste broth before serving and adjust seasoning with more vegetarian Worcestershire sauce or lime juice if needed.
  • Choose good-quality potstickers for best texture and flavor; homemade works wonderfully.
