Description

Watermelon Popsicles are a refreshing summer treat combining juicy fresh watermelon with natural flavors and a smooth yet firm texture thanks to a natural gelling agent. Easy to make and customizable with various fruit and herb additions, they provide a perfectly hydrating and naturally sweet snack ideal for hot days.

Ingredients

Scale

Main Ingredients

  • 4 cups fresh watermelon, cubed and deseeded
  • 2 tablespoons lemon juice (natural)
  • 1 to 2 tablespoons maple syrup (natural), optional
  • 1 teaspoon natural gelling agent
  • 1/4 cup water or coconut water
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Prepare the Watermelon: Cut fresh watermelon into cubes, remove any seeds, and place the chunks into a blender. Blend until you get a smooth puree that forms the juicy base for the popsicles.
  2. Mix in Flavor Enhancers: Add lemon juice, maple syrup (if using), and a small amount of water or coconut water to the blender. Blend again to combine and balance sweetness with fresh tartness.
  3. Incorporate the Natural Gelling Agent: Gently whisk in the natural gelling agent to the watermelon mixture ensuring it is fully dissolved to help the popsicles hold their shape when frozen.
  4. Pour into Molds: Pour the watermelon mixture into silicone or plastic popsicle molds. Optionally, tuck in a few fresh mint leaves or small fruit pieces for added texture and flavor.
  5. Freeze Until Firm: Place the molds in the freezer for at least 4 to 6 hours or overnight until the popsicles are completely frozen and firm.

Notes

  • Choose ripe and sweet watermelon for the best natural flavor.
  • Use fresh lemon juice for brightness without bitterness.
  • The natural gelling agent is essential for a smooth, non-icy texture.
  • Layer flavors by adding herbs or small fruit pieces inside molds.
  • To release popsicles easily, run warm water over the molds for a few seconds.
