Ingredients

Scale

Main Ingredients

  • 200g thick udon noodles
  • 250g fresh shrimps, peeled and deveined
  • 100g smoked turkey bacon, cut into bite-sized pieces
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 red bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 medium carrot, thinly sliced into strips
  • 3 green onions, chopped finely
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon apple cider vinegar
  • Freshly ground black pepper, to taste
  • Pinch of natural gelling agent (optional)

Optional Variations and Garnishes

  • Snap peas or baby corn for extra crunch and sweetness
  • Firm tofu or tempeh as a plant-based protein alternative
  • Fresh chili or chili flakes for heat
  • Fresh cilantro or basil leaves for herbal freshness
  • Toasted sesame seeds or crushed peanuts for garnish

Instructions

  1. Prep Your Ingredients: Rinse and dry the shrimps, peel and devein if needed. Slice the bell peppers and carrots into thin strips, chop the green onions finely, and mince the garlic cloves. Cut the smoked turkey bacon into bite-sized pieces to allow it to crisp well during cooking.
  2. Cook the Udon Noodles: Bring a large pot of water to a boil and cook the udon noodles according to package instructions until just tender. Drain well and rinse under cold water to stop the cooking and prevent sticking. Set aside.
  3. Sauté the Turkey Bacon and Shrimps: Heat vegetable oil in a large wok or skillet over medium-high heat. Add the turkey bacon first to render its fat and crisp it up. Once golden, add the shrimps and cook until pink and opaque, about 2-3 minutes. Remove both from the pan and set aside on a plate.
  4. Stir-Fry the Vegetables: In the same pan, add a touch more oil if needed. Toss in the minced garlic followed by the carrots and bell peppers. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp. Add the green onions towards the end for freshness.
  5. Combine Noodles and Sauce: Return the cooked turkey bacon and shrimps to the pan along with the udon noodles. Drizzle in the vegetarian Worcestershire sauce (natural), apple cider vinegar, and sesame oil. Sprinkle with freshly ground black pepper. Toss everything vigorously to coat noodles and ingredients evenly with the flavorful sauce. If using, add a pinch of natural gelling agent to slightly thicken the sauce.
  6. Serve Immediately: Plate the Yaki Udon With Shrimps while hot for optimal flavor and texture. Garnish with toasted sesame seeds, chopped green onions, or fresh chili slices if desired.

Notes

  • Do not overcook the shrimp; cook until just pink to keep them juicy and tender.
  • Use thick udon noodles for a satisfying chewy texture that holds up well.
  • Stir-fry on high heat to keep vegetables crisp and lock in flavor.
  • Prepare and chop all ingredients ahead of cooking to speed up the process.
  • Adjust seasonings at the end by tasting and adding more vegetarian Worcestershire sauce (natural), black pepper, or apple cider vinegar as needed.
