Description

A quick, fresh, and flavorful Bok Choy Stir-fry featuring crisp bok choy, vibrant vegetables, and savory plant-based seasonings. This light and nutritious dish is perfect for busy weeknights, delivering a colorful, satisfying, and wholesome meal that comes together in under 20 minutes.

Ingredients

Scale

Vegetables

  • 3 cups fresh bok choy, separated stems and leaves
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger root, grated
  • 1 medium carrot, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 scallions, chopped (for garnish)

Sauces and Oils

  • 2 tablespoons soy sauce (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon sesame oil

Optional

  • 1/4 teaspoon red chili flakes
  • 1/2 teaspoon natural gelling agent mixed with 1 tablespoon water
  • Toasted sesame seeds or chopped peanuts for garnish

Instructions

  1. Prepare Your Ingredients: Wash the bok choy thoroughly, separating the stems from the leaves. Thinly slice carrots and bell peppers, mince the garlic, and grate the ginger to have everything ready before cooking.
  2. Heat the Pan and Start Aromatics: Warm the sesame oil over medium-high heat in a large skillet or wok. Add the garlic and ginger and sauté for about 30 seconds until fragrant but not browned.
  3. Cook the Vegetables: Add the chopped carrot and bell peppers first since they take longer to soften. Stir-fry for 3 to 4 minutes until they begin to tenderize but keep a bit of crunch.
  4. Add Bok Choy Stems and Sauce: Next, toss in the bok choy stems and stir well. Pour in soy sauce (natural) and vegetarian Worcestershire sauce (natural) to coat the vegetables evenly. Cook for another 2 minutes to meld flavors.
  5. Add Bok Choy Leaves and Finish Cooking: Add the bok choy leaves last since they wilt quickly. Stir-fry everything together until the leaves are just tender and bright green, usually around 1 to 2 minutes.
  6. Add Final Touches: If you want a glossy sauce, sprinkle the natural gelling agent mixture, stirring until thickened. Finish with red chili flakes and a sprinkle of scallions for freshness. Garnish with toasted sesame seeds or chopped peanuts if desired.

Notes

  • Use a hot wok or pan to keep vegetables crisp and vibrant.
  • Chop all vegetables before heating the oil to ensure quick and smooth cooking.
  • Stir-fry in batches if needed to avoid overcrowding and steaming the vegetables.
  • Taste and adjust seasoning by adding more soy sauce (natural) or vegetarian Worcestershire sauce (natural) as preferred.
  • Fresh bok choy provides the best texture and flavor over frozen.
  • Feel free to add shrimp, tofu, or thinly sliced chicken for extra protein.
  • Swap soy sauce (natural) for tamari or coconut aminos for gluten-free options.
