Description

These easy Buttermilk Biscuits are warm, fluffy, and tender treats perfect for brunch. Made with simple ingredients, they yield soft biscuits that rise beautifully every time, featuring a melt-in-your-mouth texture and delightful flavor, ideal for pairing with a variety of sweet or savory dishes.

Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda (natural)
  • 1 teaspoon salt

Fat

  • 1/2 cup cold unsalted plant-based butter

Wet Ingredients

  • 3/4 cup buttermilk (plant-based)

Instructions

  1. Prepare Your Ingredients: Start by chilling your plant-based butter and measuring your dry ingredients into a large bowl. Keeping the butter cold is key to creating flaky layers in your biscuits.
  2. Mix the Dry Ingredients and Cut in Butter: Whisk together the flour, baking powder, baking soda (natural), and salt. Then, using a pastry cutter or your fingers, work the cold plant-based butter into the dry mixture until it resembles coarse crumbs.
  3. Add the Buttermilk: Pour the buttermilk (plant-based) into the dry mixture and gently fold it in just until the dough comes together. Overmixing will make the biscuits tough, so handle the dough lightly.
  4. Shape and Cut the Biscuits: Turn the dough out onto a floured surface and pat it into a rectangle. Fold it over once or twice to create layers and then gently press it to about 1-inch thickness. Use a round biscuit cutter to cut out the biscuits, placing them close together on your baking sheet.
  5. Bake Until Golden: Bake your biscuits in a preheated oven at 220°C (425°F) for about 12-15 minutes until they are golden brown on top. For an extra golden finish, brush with melted plant-based butter (natural) right after they come out of the oven.

Notes

  • Keep ingredients cold to ensure flaky layers and tender biscuits.
  • Do not overmix the dough to keep biscuits light and soft.
  • Use a sharp cutter to prevent squishing the dough and allow biscuits to rise evenly.
  • Handle the dough gently and fold it to create layers without developing gluten too much.
  • Bake immediately after shaping to help the biscuits rise well and maintain their fluffy texture.
