Description

This Cheesy Broccoli Cauliflower Casserole is a warm and nutrient-packed comfort meal featuring tender broccoli and cauliflower florets enveloped in a rich, creamy plant-based cheese sauce. Enhanced with smoky turkey bacon and aromatics, the casserole offers a perfect balance of flavors and textures. A natural gelling agent ensures a luscious consistency, making it a versatile dish perfect for family dinners or festive gatherings.

Ingredients

Scale

Vegetables

  • 3 cups fresh broccoli florets
  • 3 cups fresh cauliflower florets
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Cheese Sauce

  • 1 1/2 cups plant-based milk (unsweetened)
  • 1 1/2 cups shredded plant-based cheese
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon natural gelling agent

Additional Ingredients

  • 4 slices smoked turkey bacon, chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash and chop the broccoli and cauliflower into florets. Lightly steam them until just tender but still crisp to retain their vibrant color and texture.
  2. Cook the Smoked Turkey Bacon and Aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped smoked turkey bacon and sauté until crispy. Add the finely chopped onions and minced garlic, cooking until fragrant and golden.
  3. Make the Cheese Sauce: In a separate pot, combine plant-based milk, shredded plant-based cheese, vegetarian Worcestershire sauce (natural), apple cider vinegar, and the natural gelling agent. Warm gently while stirring continuously until a creamy sauce forms. Season with salt and freshly ground black pepper to taste.
  4. Combine and Assemble: In a large mixing bowl, fold the steamed broccoli and cauliflower into the cheese sauce until evenly coated. Stir in the crispy smoked turkey bacon and onion mixture. Transfer the mixture to a greased casserole dish and smooth the top evenly.
  5. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the casserole for 25 to 30 minutes or until bubbling and golden on top. Let it rest for 5 minutes before serving to allow the flavors to meld and the texture to set.

Notes

  • Steam the broccoli and cauliflower instead of boiling to preserve nutrients and texture.
  • Use sharp plant-based cheese for a more intense cheesy flavor and better melting.
  • Measure the natural gelling agent carefully to achieve a luscious texture without firmness.
  • Allow the casserole to rest a few minutes after baking to help it set and improve slicing.
  • Adjust seasoning of the cheese sauce before baking to achieve the perfect balance of flavors.
