Description

This Easy Cheesy Potato Bake is a warm, comforting, and delicious dish featuring tender sliced russet potatoes baked in a rich, creamy plant-based cheese sauce, enhanced with smoky turkey bacon. Perfect as a hearty main or side, this recipe is simple to prepare and delivers gooey texture and satisfying flavors in every bite.

Ingredients

Scale

Potatoes

  • 4 large russet potatoes, washed, peeled, and thinly sliced

Protein and Vegetables

  • 6 slices smoked turkey bacon
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced

Sauce

  • 1 cup plant-based cream or milk
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon natural gelling agent (such as agar or pectin)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese and Garnish

  • 1 1/2 cups plant-based cheese, shredded or sliced
  • 2 tablespoons fresh parsley or thyme, chopped

Instructions

  1. Prepare the Potatoes: Wash and peel the russet potatoes, then slice them thinly and evenly to ensure they cook uniformly. Place the slices in a bowl to prevent browning.
  2. Cook the Smoked Turkey Bacon and Onions: In a skillet over medium heat, cook the smoked turkey bacon until crispy. Remove, chop into bite-sized pieces, and set aside. In the same skillet, sauté the sliced onions and minced garlic until soft and translucent to bring out their natural sweetness.
  3. Make the Creamy Sauce: In a saucepan, combine the plant-based cream or milk with vegetarian Worcestershire sauce (natural), salt, pepper, and natural gelling agent. Heat gently while stirring until the sauce thickens into a luscious, creamy consistency.
  4. Assemble the Bake: Grease a baking dish. Layer half of the sliced potatoes at the bottom, then sprinkle half the smoked turkey bacon and sautéed onions over them. Drizzle half of the creamy sauce across the layer. Repeat with the remaining potatoes, bacon, onions, and sauce. Finish with a thick layer of plant-based cheese on top.
  5. Bake Until Golden and Bubbling: Preheat the oven to 180°C (350°F). Bake the assembled dish for about 45 minutes or until the potatoes are tender and the plant-based cheese topping is melted and golden brown.
  6. Garnish and Serve: Let the bake rest slightly before serving. Sprinkle chopped fresh parsley or thyme on top for a bright, fresh herbal note.

Notes

  • Use a mandoline or sharp knife for even potato slices to ensure uniform cooking.
  • Take care when layering ingredients to allow flavors to meld and balance in every bite.
  • Allow the bake to cool slightly before cutting to help it hold its shape.
  • Fresh herbs sprinkled right before serving give a burst of color and aroma.
  • Use high-quality plant-based cheese for better flavor and melting texture.
