Description

This Chicken Feta Spinach Pasta is a creamy and flavorful dish combining tender chicken breasts, fresh spinach, and tangy plant-based feta cheese in a luscious sauce enhanced by natural gelling agent. Perfect for quick weeknight dinners or comforting weekend meals, it balances protein, vibrant colors, and Mediterranean-inspired flavors for a satisfying and wholesome meal.

Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts

Cheese and Dairy Alternatives

  • 1 cup plant-based feta cheese, crumbled

Vegetables and Greens

  • 4 cups fresh spinach leaves
  • 3 garlic cloves, minced

Pasta

  • 8 ounces pasta of your choice (penne, fusilli, spaghetti, or gluten-free alternatives)

Liquids and Sauces

  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil

Other

  • 1 teaspoon natural gelling agent (such as pectin, agar, or carrageenan)
  • Salt and pepper, to taste
  • Reserved pasta water, as needed for sauce consistency

Instructions

  1. Prepare the Pasta: Start by boiling a large pot of salted water and cooking your pasta according to the package instructions until al dente. Drain and set aside, reserving a little pasta water for later sauce adjustment.
  2. Cook the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook them until golden brown and thoroughly cooked through, about 5-7 minutes per side depending on thickness. Once cooked, slice or shred the chicken and set it aside.
  3. Make the Sauce Base: Use the same skillet and add a little more olive oil if needed. Sauté minced garlic until fragrant and golden but not burnt. Stir in the vegetarian Worcestershire sauce (natural) and apple cider vinegar to build layers of flavor, followed by fresh spinach leaves. Cook until the spinach wilts down beautifully.
  4. Combine with Feta and Pasta: Add the plant-based feta cheese to the skillet along with a splash of reserved pasta water and a small amount of natural gelling agent to achieve a creamy, luscious texture. Stir gently until the sauce is smooth and coats the spinach evenly. Incorporate the cooked pasta and chicken back into the skillet, tossing everything to combine and warm through.
  5. Finish and Serve: Taste and adjust seasoning with salt and pepper as needed. Serve immediately while warm, garnished with extra plant-based feta or freshly chopped parsley if desired.

Notes

  • Use fresh spinach for optimal wilting and freshness.
  • Reserve pasta water as the starch helps the sauce cling better to the noodles.
  • Cook chicken evenly by ensuring pieces have a uniform thickness.
  • Cook garlic gently to avoid burning and keep the sauce flavor mild and sweet.
  • Add natural gelling agent gradually to achieve perfect creamy consistency without thickening too much.
  • Garnish with freshly chopped parsley or basil for added aroma and color.
  • Reheat gently in a skillet with a splash of water or plant-based milk to revive sauce creaminess.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
