  • 1 tbsp vegetarian Worcestershire sauce (natural)

Carbohydrates

  • 6 oz wide egg noodles (plant-based)

Instructions

  1. Prepare Your Ingredients: Peel and chop the carrots, celery, and onion into bite-sized pieces. Mince the garlic and chop the fresh parsley and thyme. Cut the chicken into chunks or leave whole to shred later.
  2. Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery, cooking until softened and fragrant, about 5 to 7 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add Chicken and Broth: Place the chicken pieces into the pot and pour in the chicken broth. Stir in vegetarian Worcestershire sauce (natural) and bring to a gentle simmer.
  4. Simmer and Cook Noodles: Let the soup simmer for 20 to 25 minutes until the chicken is cooked through and vegetables are tender. Remove chicken, shred or chop it, then return it to the pot. Add the noodles and cook until tender, about 7 to 10 minutes.
  5. Finish with Fresh Herbs and Seasoning: Stir in fresh parsley and thyme. Season with salt and pepper to taste, then give the soup a final stir. Serve warm and enjoy.
