Ingredients

Scale

Proteins

  • 1 lb thinly sliced chicken breast

Sauces and Flavorings

  • 1/4 cup soy sauce (natural)
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tsp sesame oil
  • 1/2 tsp natural gelling agent

Vegetables

  • 1/2 cup carrots, chopped
  • 1/2 cup bell peppers, chopped
  • 1/4 cup green onions, chopped

Noodles

  • 8 oz rice noodles (or preferred noodle type)

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce (natural), vegetarian Worcestershire sauce (natural), brown sugar, apple cider vinegar, minced garlic, minced ginger, sesame oil, and natural gelling agent. Set aside to let flavors meld.
  2. Cook the Noodles: Cook the rice noodles according to package instructions until tender but firm. Drain and rinse under cold water to prevent sticking. Set aside.
  3. Sauté the Chicken: Heat a drizzle of sesame oil in a large skillet over medium-high heat. Add the thinly sliced chicken breast and cook for 4 to 6 minutes until golden and cooked through. Remove chicken from skillet and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add chopped carrots, bell peppers, and green onions. Stir-fry for 3 to 4 minutes until vegetables are tender-crisp and vibrant.
  5. Combine and Simmer: Return the cooked chicken to the skillet with the vegetables. Pour the prepared teriyaki sauce over the mixture and stir well. Let simmer for 2 to 3 minutes until the sauce thickens and coats the ingredients evenly.
  6. Toss in Noodles: Add the cooked noodles to the skillet and gently toss everything together until noodles are evenly coated with the glossy teriyaki sauce and mixed thoroughly with chicken and vegetables.

Notes

  • Use fresh chicken thinly sliced for quick, even cooking and better texture.
  • Do not overcook noodles; slightly undercook to allow further cooking when mixed with sauce.
  • Taste the sauce before combining, adjusting sweetness or acidity as needed.
  • Prepare and chop all ingredients before cooking to ensure an efficient process.
  • Add sauce gradually to achieve the perfect consistency without making the dish too thick or watery.
