Instructions

  1. Prepare the Dough: Combine warm plant-based milk, active dry yeast, and a pinch of natural sugar in a bowl. Let it sit for about 5 minutes until frothy. In a larger mixing bowl, mix all-purpose flour, natural sugar, and natural gelling agent. Slowly add in the yeast mixture and vegetarian Worcestershire sauce (natural). Knead until smooth and elastic, about 8 to 10 minutes by hand or 5 minutes with a stand mixer and dough hook.
  2. First Rise: Cover the dough with a clean towel and place in a warm, draft-free area. Let it rise until doubled in size, approximately 1 to 1.5 hours.
  3. Prepare Cinnamon Sugar Layer: In a small bowl, mix melted plant-based butter with ground cinnamon and natural sugar for the cinnamon sugar layer.
  4. Shape the Bread: Roll the dough on a lightly floured surface into a 12 by 9 inch rectangle. Brush the cinnamon sugar mixture evenly over the dough. Roll tightly from one long edge into a log, pinch seams and ends to seal, and place seam-side down into a greased loaf pan.
  5. Second Rise: Cover the loaf pan loosely and let the dough rise again for 30 to 45 minutes until it puffs above the pan edge.
  6. Bake: Preheat oven to 350°F (175°C). Bake the bread for 30 to 35 minutes until golden brown and a toothpick comes out clean. Tent with foil if the top browns too quickly.
