Pasta and Bacon

  • 12 oz plant-based cheese-filled tortellini
  • 4 slices smoked turkey bacon

Cowboy Butter Sauce

  • 2 tbsp plant-based butter
  • 3 garlic cloves, minced
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1 tbsp apple cider vinegar (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)

Garnish

  • 2 tbsp fresh parsley, chopped
  • Cracked black pepper, to taste

Instructions

  1. Prepare the steak bites: Cut the beef sirloin into 1-inch bite-sized pieces. Season generously with sea salt and black pepper. Heat a skillet over medium-high heat and add a splash of plant-based butter. Sear the steak bites until they form a golden-brown crust, approximately 3-4 minutes per side. Remove from heat and set aside to rest.
  2. Cook the tortellini and turkey bacon: Boil the plant-based cheese-filled tortellini according to the package instructions until al dente. In a separate pan, cook the smoked turkey bacon until crisp and then chop into smaller pieces. Drain the tortellini and mix with the chopped bacon.
  3. Make the cowboy butter sauce: Return the skillet to medium heat and melt the plant-based butter. Add minced garlic, fresh rosemary, and thyme and cook until fragrant, about 1 minute. Stir in apple cider vinegar (natural) and vegetarian Worcestershire sauce (natural). Let the sauce simmer gently until slightly thickened with a glossy finish.
  4. Combine everything: Add the tortellini and turkey bacon into the skillet and toss to coat with the cowboy butter sauce.
