  • Yield: 8-10 crepes 1x
  • Diet: Plant-Based

Description

These light and versatile crepes are perfect for breakfast, lunch, or dinner. Made with simple, natural ingredients, this recipe creates thin, tender crepes that serve as an ideal base for a variety of sweet or savory plant-based fillings. Quick to prepare and easy to customize, these crepes offer a satisfying and delicate meal suitable for all tastes and dietary preferences.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup (natural)

Wet Ingredients

  • 1 1/4 cups plant-based milk
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract (natural)

Instructions

  1. Prepare the batter: In a large bowl, whisk together all-purpose flour, salt, and maple syrup (natural). In a separate bowl, combine plant-based milk, eggs, vegetable oil, and vanilla extract (natural). Gradually pour the wet ingredients into the dry ingredients while stirring continuously until a smooth, thin batter forms. Let the batter rest for 15-20 minutes to achieve the ideal texture.
  2. Heat the pan: Preheat a non-stick skillet or crepe pan over medium heat. Lightly coat the surface with vegetable oil using a paper towel or brush to prevent sticking. Ensure the pan temperature is moderate for even cooking without burning.
  3. Cook the crepes: Pour approximately 1/4 cup of batter onto the center of the pan. Immediately tilt and swirl the pan to spread the batter evenly in a thin layer. Cook the crepe for 1-2 minutes until the edges begin to lift and the surface loses its shiny appearance. Carefully flip the crepe and cook for another 30 seconds to 1 minute. Transfer the cooked crepe to a plate and repeat with the remaining batter.
  4. Fill and serve: Once all crepes are cooked, add your favorite fillings while the crepes are still warm. Fold, roll, or stack the crepes depending on the filling and presentation preference. Serve immediately with desired toppings.

Notes

  • Rest the batter before cooking to ensure smoother, more elastic crepes.
  • Use a non-stick pan or well-seasoned skillet to prevent crepes from tearing and to ease flipping.
  • Pour a thin layer of batter to achieve the delicate texture characteristic of crepes.
  • Maintain medium heat to cook the crepes evenly and avoid burning.
  • Keep cooked crepes warm by stacking them between parchment paper sheets and covering with a clean towel.
