Description

Dirty Martini Pasta is a vibrant and flavorful dish combining smoky turkey bacon, creamy plant-based cheese, and a bright tang from apple cider vinegar. This pasta recipe balances savory, creamy, and tangy elements for a comforting yet exciting meal that is quick and simple to prepare, perfect for any dinner occasion.

Ingredients

Scale

Main Ingredients

  • 200g smoked turkey bacon, chopped bite-sized
  • 250g short pasta (penne or rigatoni)
  • 150g plant-based cheese (plant-based), room temperature
  • 3 garlic cloves, minced
  • 2 tbsp apple cider vinegar
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp extra virgin olive oil
  • 1/2 cup black olives, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp natural gelling agent
  • 1 tbsp fresh lemon juice

Instructions

  1. Prepare the pasta: Bring a large pot of salted water to a boil and cook your pasta according to the package instructions until al dente. Reserve about a cup of pasta water before draining to help make the sauce silky smooth.
  2. Cook the smoked turkey bacon: In a large skillet, heat a little olive oil over medium heat. Add the smoked turkey bacon, chopping it into bite-sized pieces as it cooks until crispy and golden brown. Remove from the skillet and set aside, leaving the rendered fat behind.
  3. Sauté garlic and olives: Using the same skillet with bacon drippings, add minced garlic and cook until fragrant but not browned. Toss in the chopped black olives and stir for a minute to infuse the oil with a briny, aromatic kick.
  4. Mix the sauce: Add apple cider vinegar, vegetarian Worcestershire sauce (natural), fresh lemon juice, and a small pinch of natural gelling agent to the skillet. Stir constantly, letting the sauce thicken slightly while maintaining its light texture. If needed, add a splash of reserved pasta water to loosen.
  5. Combine pasta and cheese: Add your freshly drained pasta to the skillet and toss well with the smoky sauce mixture. Fold in the creamy plant-based cheese (plant-based) until melted and evenly distributing through the noodles, creating a luscious coating.
  6. Add bacon and garnish: Return the crispy smoked turkey bacon to the pasta, stirring gently to combine. Finish with freshly chopped parsley sprinkled over the top for that vibrant burst of color and fresh flavor.

Notes

  • Use high-quality pasta for best texture and taste.
  • Reserve pasta water to help achieve a silky smooth sauce consistency.
  • Cook bacon slowly to keep it crispy but tender.
  • Adjust acidity by tasting as you add apple cider vinegar to balance the tanginess.
  • Warm your plant-based cheese (plant-based) to room temperature before adding for smoother melting.
