Ingredients

Scale

Lentils and Broth

  • 1 cup French lentils, rinsed
  • 6 cups vegetable broth

Vegetables

  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced

Proteins and Flavorings

  • 4 slices smoked turkey bacon, sliced into bite-sized pieces
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 sprigs fresh thyme
  • 2 bay leaves

Oils and Seasonings

  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • Fresh parsley, chopped
  • Extra virgin olive oil, for drizzling

Instructions

  1. Prepare the Ingredients: Rinse the French lentils under cold water. Finely chop the carrots, celery, onion, and garlic. Slice the smoked turkey bacon into bite-sized pieces to have all ingredients ready for cooking.
  2. Sauté the Vegetables and Bacon: Heat olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until vegetables soften and onions turn translucent. Add the smoked turkey bacon and cook until lightly crisp, releasing its smoky aroma.
  3. Add Flavor Enhancers: Stir in the minced garlic, vegetarian Worcestershire sauce (natural), fresh thyme sprigs, and bay leaves. Cook for another minute to meld the flavors.
  4. Simmer with Lentils and Broth: Add the rinsed lentils and pour in the vegetable broth. Season with salt and black pepper. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 30-40 minutes until lentils are tender but hold their shape.
  5. Finish and Adjust Seasonings: Remove bay leaves and thyme stems. Taste and adjust salt and pepper as needed. For a thicker broth, mash a small handful of lentils against the pot side. Garnish with fresh parsley and a drizzle of extra virgin olive oil before serving.

Notes

  • Use French lentils to maintain firm texture and prevent mushiness.
  • Smoked turkey bacon adds savory depth without overpowering other flavors.
  • Chop vegetables uniformly for even cooking and consistent texture.
  • Simmer slowly for best flavor development.
  • Add fresh parsley just before serving to brighten the soup.
