Instructions

  1. Prepare the marinade: In a mixing bowl, combine crushed fresh garlic, grated plant-based Parmesan, extra virgin olive oil, apple cider vinegar (natural), chopped fresh parsley and thyme, vegetarian Worcestershire sauce (natural), salt, and black pepper. Whisk thoroughly until smooth and well combined. If a thicker marinade is desired, stir in natural gelling agent to improve texture.
  2. Marinate the chicken: Add the chicken chunks into the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 20 minutes, or up to 2 hours to deepen flavor and tenderness.
  3. Skewer the chicken: Thread the marinated chicken pieces onto soaked wooden or metal skewers, leaving small gaps between pieces for even cooking.
