Description

Honey Glazed Carrots and Green Beans is a quick and flavorful side dish combining tender green beans and vibrant carrots tossed in a luscious natural honey glaze. Ready in under 20 minutes, this nutritious and visually stunning dish adds sweetness and color to any meal, complementing a variety of main courses seamlessly.

Ingredients

Vegetables

  • Fresh carrots: 4 medium, peeled and sliced into sticks or rounds
  • Green beans: 12 oz, trimmed

Honey Glaze

  • Pure honey (natural): 3 tbsp
  • Olive oil: 2 tbsp
  • Fresh garlic: 2 cloves, minced
  • Apple cider vinegar (natural): 1 tbsp
  • Sea salt: 1/2 tsp
  • Freshly ground black pepper: 1/4 tsp

Instructions

  1. Prepare the Vegetables: Wash and trim the green beans by removing their ends. Peel and slice the carrots into even-sized sticks or rounds to ensure uniform cooking and texture.
  2. Blanch the Vegetables: Bring a pot of salted water to a boil. Add the carrots and blanch for about 3 minutes. Add the green beans and blanch both vegetables together for an additional 2 minutes. Immediately transfer the vegetables to an ice bath to stop the cooking and preserve their vibrant color and crunch.
  3. Make the Honey Glaze: In a small bowl, combine pure honey (natural), olive oil, minced garlic, apple cider vinegar (natural), sea salt, and freshly ground black pepper. Stir well until smooth and glossy.
  4. Sauté the Vegetables and Glaze: Heat a pan over medium heat. Add the drained carrots and green beans, then pour the honey glaze over them. Toss gently and cook for 5-7 minutes, stirring occasionally, until the vegetables are warm, well-coated, and the glaze has thickened slightly.
  5. Serve Warm: Transfer the glazed vegetables to a serving dish. Garnish as desired and enjoy fresh and warm to fully appreciate the texture and vibrant flavors.

Notes

  • Slice carrots evenly to ensure uniform cooking and texture.
  • Use an ice bath after blanching to lock in color and crunch.
  • Cook the glaze over medium heat to avoid burning the honey’s sugars.
  • Use fresh garlic and high-quality pure honey (natural) for the best taste.
  • Avoid overcrowding the pan; sauté in batches if necessary to maintain texture.
