- Prepare the Ingredients: Chop the smoked turkey bacon into small pieces and finely slice the scallions. Measure out the shredded plant-based cheese and gather all remaining ingredients before mixing.
- Mix the Egg Mixture: In a medium bowl, whisk together the eggs, vegetarian Worcestershire sauce (natural), black pepper, salt, and natural gelling agent until well combined. Stir in the chopped smoked turkey bacon, scallions, and shredded plant-based cheese until evenly distributed.
- Fill the Silicone Molds: Lightly grease silicone egg bite molds with plant-based oil or cooking spray. Pour the egg mixture into each mold, filling almost to the top but leaving space to allow for expansion during cooking.
- Set Up the Instant Pot: Pour one cup of water into the bottom of the Instant Pot. Place the trivet or metal rack inside to keep the molds elevated above the water level. Carefully arrange the filled molds on the trivet.
- Cook the Egg Bites: Seal the Instant Pot lid and cook on high pressure for 9 minutes. After cooking, allow a natural pressure release for 10 minutes to ensure the egg bites remain soft and fluffy.
- Cool and Remove: Carefully take the molds out of the Instant Pot and let them cool for a few minutes. Gently pop out the egg bites. Serve warm or store for later use.
