Ingredients
Scale
Pasta and Proteins
- 12 oz fresh or refrigerated cheese-filled tortellini (plant-based)
- 6 slices smoked turkey bacon
- 1 cup plant-based cheese, roughly chopped
Vegetables and Herbs
- 1 cup cherry tomatoes, halved
- 2 cups baby spinach leaves
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, roughly chopped
Dressing
- 1/4 cup olive oil (natural)
- 1 clove garlic, minced
- 2 tbsp apple cider vinegar (natural)
- 1 tsp natural gelling agent
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process and keep the pasta cool.
- Prepare the Smoked Turkey Bacon: While the pasta cooks, crisp the smoked turkey bacon in a skillet over medium heat until golden and crunchy. Remove and drain on paper towels, then chop into bite-sized pieces.
- Chop the Fresh Ingredients: Slice the cherry tomatoes in halves, thinly slice the red onion, and roughly chop the plant-based cheese and fresh basil leaves to prepare for assembly.
- Mix the Dressing: In a small bowl, whisk together olive oil, minced garlic, apple cider vinegar, a pinch of salt, pepper, and natural gelling agent until the dressing becomes silky and coats evenly.
- Combine and Toss: In a large bowl, assemble the tortellini, smoked turkey bacon, plant-based cheese, cherry tomatoes, baby spinach, and red onion. Pour the dressing over and toss gently but thoroughly to combine all flavors.
- Chill and Serve: Refrigerate the salad for at least 30 minutes to let the flavors meld beautifully together before serving. Garnish with extra fresh basil if desired.
Notes
- Use fresh or refrigerated tortellini for better flavor and texture.
- Drain the pasta well and cool it to keep the salad from becoming soggy.
- Cook smoked turkey bacon last to retain its crispness.
- Season gradually with salt and pepper after tossing with dressing.
- Fresh herbs like basil or parsley greatly enhance the aroma and freshness of the salad.
