Description

Italian Tortellini Pasta Salad combines tender cheese-filled tortellini, crispy smoked turkey bacon, creamy plant-based cheese, and a vibrant natural gelling agent dressing to create a fresh, flavorful, and colorful salad perfect for lunch, dinner, or picnics.

Ingredients

Scale

Pasta and Proteins

  • 12 oz fresh or refrigerated cheese-filled tortellini (plant-based)
  • 6 slices smoked turkey bacon
  • 1 cup plant-based cheese, roughly chopped

Vegetables and Herbs

  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach leaves
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, roughly chopped

Dressing

  • 1/4 cup olive oil (natural)
  • 1 clove garlic, minced
  • 2 tbsp apple cider vinegar (natural)
  • 1 tsp natural gelling agent
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil and cook the tortellini according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process and keep the pasta cool.
  2. Prepare the Smoked Turkey Bacon: While the pasta cooks, crisp the smoked turkey bacon in a skillet over medium heat until golden and crunchy. Remove and drain on paper towels, then chop into bite-sized pieces.
  3. Chop the Fresh Ingredients: Slice the cherry tomatoes in halves, thinly slice the red onion, and roughly chop the plant-based cheese and fresh basil leaves to prepare for assembly.
  4. Mix the Dressing: In a small bowl, whisk together olive oil, minced garlic, apple cider vinegar, a pinch of salt, pepper, and natural gelling agent until the dressing becomes silky and coats evenly.
  5. Combine and Toss: In a large bowl, assemble the tortellini, smoked turkey bacon, plant-based cheese, cherry tomatoes, baby spinach, and red onion. Pour the dressing over and toss gently but thoroughly to combine all flavors.
  6. Chill and Serve: Refrigerate the salad for at least 30 minutes to let the flavors meld beautifully together before serving. Garnish with extra fresh basil if desired.

Notes

  • Use fresh or refrigerated tortellini for better flavor and texture.
  • Drain the pasta well and cool it to keep the salad from becoming soggy.
  • Cook smoked turkey bacon last to retain its crispness.
  • Season gradually with salt and pepper after tossing with dressing.
  • Fresh herbs like basil or parsley greatly enhance the aroma and freshness of the salad.
