Description

Oatmeal Fudge Bars combine chewy rolled oats with a rich and fudgy chocolate layer for a comforting, sweet, and satisfying snack or dessert. Made with simple pantry staples and plant-based ingredients, these bars are easy to make and perfect for sharing with family and friends. Customize with nuts or dried fruit for extra flavor and texture.

Ingredients

Scale

Oat Base

  • 2 cups rolled oats
  • 1/2 cup natural brown sugar
  • Pinch of salt
  • 1/2 cup plant-based butter, melted

Fudge Layer

  • 1/3 cup natural cocoa powder
  • 1/3 cup maple syrup (natural)
  • 1/2 cup plant-based milk
  • 1 tablespoon vegetarian Worcestershire sauce
  • 1 teaspoon vanilla extract (natural)
  • 1 teaspoon natural gelling agent

Optional Mix-ins and Toppings

  • Chopped walnuts or pecans (optional)
  • Dried cranberries or raisins (optional)
  • Plant-based chocolate chips (optional)

Instructions

  1. Prepare the Oat Base: Combine rolled oats, natural brown sugar, and a pinch of salt in a large bowl. Melt plant-based butter and mix it into the oat mixture. Press this mixture evenly into the base of a baking pan to create a sturdy foundation.
  2. Make the Fudge Layer: In a saucepan, whisk together natural cocoa powder, maple syrup (natural), plant-based milk, vegetarian Worcestershire sauce, vanilla extract (natural), and natural gelling agent. Heat gently, stirring continuously until the mixture is melted and smooth. Pour this chocolate mixture evenly over the oat base.
  3. Bake and Cool: Bake the assembled bars at 350°F (175°C) until the fudge layer is set but still soft, about 20-25 minutes. Remove from the oven and allow the bars to cool completely to help them firm up for slicing.
  4. Slice and Serve: Once cooled, cut the bars into squares or rectangles. Serve immediately or store for later snacking.

Notes

  • Use old-fashioned rolled oats for the best chewy texture.
  • Allow the fudge layer to cool fully to ensure clean slicing.
  • Adjust sweetness by tasting the fudge mixture before baking and adding more maple syrup if desired.
  • Press the oat base firmly into the pan to prevent crumbling.
  • Use a sharp knife, warming or cleaning it between cuts for neat edges.
