Instructions

  1. Sauté the Garlic and Shrimp: Melt 2 tablespoons of butter (plant-based) in a large pot over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and golden but not browned. Add shrimp, season with salt and pepper, and cook 2-3 minutes per side until pink and opaque. Remove shrimp from pot and set aside.
  2. Cook the Pasta in Broth: Add dry pasta directly to the pot. Pour in enough vegetable broth to cover the pasta, about 3 cups. Bring to a gentle boil, stirring occasionally to prevent sticking. Simmer for 10-12 minutes until pasta is tender and most liquid has been absorbed.
  3. Create the Butter Sauce: When pasta is nearly done, stir in vegetarian Worcestershire sauce (natural) and lemon juice (natural). Add remaining 1 tablespoon butter (plant-based) if a creamier sauce is desired. Mix well to coat the pasta evenly.
  4. Combine and Finish: Return cooked shrimp to the pot. Gently toss with pasta and warm through for 1-2 minutes. Adjust seasoning with salt, black pepper, and red pepper flakes as preferred. Stir in fresh parsley before serving.
