Description

This vibrant Panzanella salad combines juicy fresh tomatoes, crispy smoked turkey bacon, hearty crusty bread, and a zesty apple cider vinegar dressing with a natural gelling agent. Its fresh, tangy flavors and satisfying texture make it a delightful and colorful dish perfect for any season and meal.

Ingredients

Scale

Salad Ingredients

  • 3 cups fresh ripe firm tomatoes, chopped into bite-size pieces
  • 1 cup smoked turkey bacon, cooked and chopped into bite-size pieces
  • 3 cups crusty bread chunks (day-old recommended)
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped

Dressing Ingredients

  • 1/4 cup apple cider vinegar (natural)
  • 1/3 cup olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon natural gelling agent
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Toast the Bread: Cut the crusty bread into chunks and toast them lightly in the oven at 350°F (175°C) or on a skillet until golden and slightly crisp but still tender inside.
  2. Prepare the Vegetables: Chop the fresh tomatoes into bite-size pieces, thinly slice the red onion, and chop fresh basil leaves to release their aromatic flavor.
  3. Cook the Smoked Turkey Bacon: In a pan over medium heat, cook the smoked turkey bacon until crispy. Once done, chop it into bite-sized crunchy pieces.
  4. Make the Dressing: In a bowl, whisk together the apple cider vinegar (natural), olive oil, minced garlic, salt, pepper, and natural gelling agent until fully combined and slightly thickened.
  5. Toss the Salad: In a large bowl, combine the toasted bread, tomatoes, red onion, fresh basil, and crispy bacon. Pour the dressing over the mixture and gently toss to evenly coat and allow the bread to start absorbing the flavors.
  6. Let it Rest: Allow the salad to sit at room temperature for 20 to 30 minutes so the flavors meld beautifully and the bread softens slightly while holding texture.

Notes

  • Use ripe but firm tomatoes for the best juiciness and flavor.
  • Day-old crusty bread absorbs the dressing well without becoming mushy.
  • Adjust the acidity and seasoning in the dressing to suit your taste preferences.
  • Letting the salad rest before serving enhances flavor integration.
  • Fresh basil or mint can add a fresh aromatic lift.
