Description

Penne Basil Pasta Salad is a vibrant and fresh dish combining al dente penne pasta with aromatic fresh basil leaves, smoky turkey bacon, plant-based cheese, cherry tomatoes, and red onion. Ingredients

Scale

Pasta and Salad Ingredients

  • 12 oz penne pasta
  • 1 cup fresh basil leaves, chopped
  • 6 strips smoked turkey bacon
  • 1 cup plant-based cheese cubes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced

Dressing Ingredients

  • 3 tbsp apple cider vinegar (natural)
  • 1/4 cup olive oil (natural)
  • 1 tsp Dijon mustard (natural)
  • 2 cloves garlic, minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook the Penne Pasta: Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente, about 10 minutes, stirring occasionally. Drain well and rinse briefly under cold water to cool and stop cooking.
  2. Prepare the Dressing: In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, minced garlic, vegetarian Worcestershire sauce, salt, and black pepper until smooth and well combined.
  3. Cook the Smoked Turkey Bacon: Heat a pan over medium heat and cook turkey bacon strips until crispy, about 5 to 7 minutes, turning occasionally. Drain on paper towels and chop into bite-sized pieces.
  4. Combine Ingredients: In a large bowl, gently toss the cooled penne pasta with chopped fresh basil, halved cherry tomatoes, diced red onion, plant-based cheese cubes, and smoked turkey bacon pieces. Pour the dressing over the salad and toss until everything is evenly coated.
  5. Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled with optional garnishes.

Notes

  • Use fresh basil added just before tossing for vibrant color and aroma.
  • Do not overcook pasta; aim for firm bite (al dente) to maintain texture.
  • Whisk dressing ingredients thoroughly to create a creamy emulsion that coats pasta well.
  • Chill salad before serving for better flavor fusion.
  • Adjust salt, pepper, or vinegar to taste for personalized flavor intensity.
  • Top with extra basil leaves or freshly cracked black pepper before serving for added flavor and visual appeal.
  • This salad pairs well with grilled vegetables, crusty bread, or a green salad.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • This salad does not freeze well due to fresh ingredients and dressing consistency.
  • No reheating needed; stir well before serving to redistribute dressing.
