Ingredients

Scale

Beef and Marinade

  • 8 oz beef sirloin strips
  • 3 tbsp soy sauce (natural)
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tsp apple cider vinegar
  • 1 tsp brown sugar (natural)

Vegetables

  • 1/2 cup red bell pepper, thinly sliced
  • 1/2 cup green bell pepper, thinly sliced
  • 1/2 cup yellow bell pepper, thinly sliced
  • 1/2 medium yellow onion, cut into thin wedges
  • 2 cloves garlic, freshly minced
  • 1 tsp fresh ginger, finely grated

Sauce and Finish

  • 2 tbsp soy sauce (natural)
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tsp apple cider vinegar
  • 1 tsp brown sugar (natural)
  • 1 tsp natural cornstarch
  • 12 tbsp water (for slurry)
  • 1 tbsp sesame oil
  • 2 green onions, freshly chopped for garnish

Instructions

  1. Prepare and Marinate the Beef: Thinly slice beef sirloin into uniform strips. In a bowl, whisk together soy sauce (natural), vegetarian Worcestershire sauce, apple cider vinegar, and brown sugar (natural). Toss the beef strips in this marinade and let sit for 5 to 10 minutes.
  2. Chop Your Veggies: Slice bell peppers into thin strips and cut onion into thin wedges. Mince the garlic and finely grate the ginger.
  3. Stir Fry Your Beef: Heat a large skillet or wok over medium-high heat with a dash of sesame oil. Add marinated beef strips and cook for 2-3 minutes until nicely seared but tender. Remove beef and set aside.
  4. Cook the Vegetables: In the same pan, add more sesame oil if needed. Sauté onions, garlic, and ginger until fragrant and translucent, about 2 minutes. Add bell peppers and stir fry for 3-4 minutes, keeping them slightly crisp.
  5. Make and Add the Sauce: In a small bowl, mix soy sauce (natural), vegetarian Worcestershire sauce, apple cider vinegar, brown sugar (natural), natural cornstarch, and water to form a slurry. Pour over vegetables and toss to coat. Cook until sauce thickens and glazes the ingredients.
  6. Combine and Finish: Return cooked beef to the pan and stir quickly to combine and heat through for about a minute. Drizzle with sesame oil and stir to incorporate the nutty aroma.

Notes

  • Slice beef thinly against the grain to ensure tenderness.
  • Use high heat for quick cooking to preserve moisture and crispness.
  • Keep stirring vegetables to avoid overcooking and maintain crunch.
  • Marinate beef briefly to boost flavor without extending prep time.
  • Cook beef in batches if needed to avoid overcrowding and achieve a perfect sear.
