Description

This Skillet Greek Chicken recipe is a quick, one-pan Mediterranean dish that features juicy chicken thighs, fresh herbs, vibrant veggies, and plant-based feta cheese. Ready in under 30 minutes, it offers a fresh and hearty meal with minimal cleanup, perfect for busy weeknights or any occasion craving wholesome flavors.

Ingredients

Scale

Chicken and Marinade

  • 4 bone-in chicken thighs, skin on
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves fresh garlic, minced
  • 1 tablespoon vegetarian Worcestershire sauce (natural)

Vegetables and Add-ins

  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 2 cups fresh spinach or baby kale

Toppings

  • 1/2 cup crumbled plant-based feta cheese

Instructions

  1. Prepare the Chicken and Marinade: Season the chicken thighs generously with salt, pepper, oregano, and thyme. In a bowl, whisk together extra virgin olive oil, lemon juice, minced garlic, and vegetarian Worcestershire sauce (natural) to create the marinade. Coat the chicken evenly with the marinade and let it rest for at least 10 minutes to absorb the flavors.
  2. Sear the Chicken: Heat a large skillet over medium-high heat. Add a splash of olive oil and place the chicken thighs skin-side down carefully. Cook until the skin is golden and crisp, about 5 to 7 minutes, then flip and cook for another 4 to 5 minutes. Remove the chicken and set aside, keeping the juices in the pan.
  3. Sauté the Vegetables: In the same skillet, add halved cherry tomatoes, Kalamata olives, and a pinch of salt. Sauté until the tomatoes soften and release their juices, about 4 minutes. Stir in the fresh spinach or baby kale until just wilted, then return the chicken to the pan.
  4. Finish Cooking and Add Cheese: Reduce the heat to low and cover the skillet. Let everything simmer gently for 8 to 10 minutes until the chicken is fully cooked and tender. Sprinkle the crumbled plant-based feta cheese evenly over the top and let it warm slightly before serving.

Notes

  • Opt for bone-in chicken thighs for juicier, more flavorful meat.
  • Marinating the chicken with lemon and herbs enhances flavor depth.
  • Use medium-high heat for searing and low heat for finishing to keep chicken moist.
  • Add fresh herbs at the end or as garnish for the brightest flavor.
  • Let the chicken rest a few minutes before serving to redistribute juices perfectly.
