Scale
Pasta and Vegetables
- 3 cups rotini pasta
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow bell pepper
- 1/2 cup diced green bell pepper
- 1 cup sweet corn kernels
- 1 cup halved cherry tomatoes
- 1 cup black beans, drained and rinsed
- 1/4 cup chopped fresh cilantro
Protein
- 6 slices smoked turkey bacon, cooked crisp and chopped
Dressing
- 3 tablespoons lime juice (natural)
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar (natural)
- 1/2 teaspoon ground cumin (natural)
- 1/2 teaspoon chili powder (natural)
- Salt and pepper, to taste
- 1/2 teaspoon natural gelling agent (optional)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cool water to stop cooking and cool the pasta for the salad.
- Prepare the Veggies and Turkey Bacon: While the pasta cooks, dice the bell peppers and halve the cherry tomatoes. Drain and rinse the black beans. In a skillet, cook the smoked turkey bacon until crisp, then chop into bite-sized pieces for mixing.
- Make the Dressing: In a small bowl, whisk together lime juice (natural), olive oil, apple cider vinegar (natural), ground cumin, chili powder, and a pinch of salt and pepper. Optionally stir in a small amount of natural gelling agent to slightly thicken the dressing.
- Combine Everything: In a large bowl, toss together the cooled pasta, diced vegetables, black beans, turkey bacon, and dressing. Fold in chopped fresh cilantro gently to keep the flavors fresh and vibrant.
- Chill Before Serving: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill nicely for serving at your BBQ or picnic.
Notes
- Cook pasta perfectly: Avoid overcooking to keep a firm, satisfying bite and prevent mushiness.
- Use fresh ingredients: The vibrant veggies and herbs really make the salad pop.
- Chill time matters: Letting the salad rest deeply enhances the flavor blend.
- Customize dressing: Adjust lime juice and spices for a perfect balance tailored to your taste.
- Keep bacon crispy: Add turkey bacon just before serving if you prefer maximum crunch.
