Ingredients

Scale

Salad Base

  • 4 cups mixed spring greens
  • 6 slices smoked turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons sunflower seeds

Dressing

  • 3 tablespoons apple cider vinegar (natural)
  • 4 tablespoons extra virgin olive oil (natural)
  • 1 teaspoon honey (natural)
  • 1 teaspoon Dijon mustard (natural)
  • Salt and black pepper to taste

Instructions

  1. Prepare the greens and vegetables: Thoroughly wash and dry the mixed spring greens. Tear any large leaves into bite-sized pieces. Thinly slice the cucumber and halve the cherry tomatoes. Peel and thinly slice the red onion. Place all prepared vegetables into a large mixing bowl.
  2. Cook the smoked turkey bacon: In a pan over medium heat, cook the smoked turkey bacon until crisp and browned, about 5 to 7 minutes. Drain on paper towels to remove excess oil, then chop into bite-sized pieces.
  3. Whisk the dressing: In a small bowl, combine apple cider vinegar, extra virgin olive oil, honey, and Dijon mustard. Whisk until fully blended and emulsified. Season with salt and black pepper to taste.
  4. Assemble the salad: Pour the dressing over the prepared vegetables and toss gently to coat. Add the chopped smoked turkey bacon and sunflower seeds, tossing lightly again to evenly distribute.
  5. Serve immediately: Serve the salad fresh to enjoy the crisp textures and vibrant flavors before the greens soften.

Notes

  • Dry the greens well to help the dressing stick better and keep the salad crisp longer.
  • Cook bacon evenly to achieve a crisp texture; avoid undercooked pieces that are chewy.
  • Taste the dressing before mixing and adjust sweetness or acidity to your preference.
  • Use fresh, quality ingredients to elevate the salad’s flavor and texture.
  • Toss gently but thoroughly to ensure every bite has a perfect blend of ingredients.
