Sticky Sesame Chicken features tender boneless chicken thighs coated in a glossy, sweet and savory natural sauce that clings perfectly with a delicious sticky texture. This quick and easy recipe is perfect for weeknight dinners or impressing guests, offering a vibrant, saucy, and family-friendly meal that can be customized to your preference.

Ingredients

Scale

Chicken

  • 500g boneless chicken thighs, cut into bite-sized pieces
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp cornstarch

Sauce

  • 2 tbsp soy sauce (natural)
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1 tbsp sesame oil
  • 1/2 tsp natural gelling agent mixed with 2 tbsp water

Garnishes

  • 1 tbsp toasted sesame seeds
  • 2 spring onions, thinly sliced

Instructions

  1. Prepare the Chicken: Cut boneless chicken thighs into bite-sized pieces. Pat them dry with a paper towel to ensure better crispiness. Lightly season with salt and pepper, then toss the pieces in cornstarch until evenly coated to help the sauce adhere.
  2. Cook the Chicken: Heat sesame oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook for 6-8 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside, keeping the crisp texture intact.
  3. Make the Sauce (natural): In the same skillet, add minced garlic and fresh ginger. Stir and cook until fragrant, about 1 minute. Pour in soy sauce (natural), brown sugar, apple cider vinegar, and the natural gelling agent mixture. Simmer gently, stirring occasionally, until the sauce thickens and becomes glossy.
  4. Combine and Coat: Return the cooked chicken pieces to the skillet. Toss thoroughly to coat each piece evenly with the sticky sauce (natural). Allow to simmer for another minute so the sauce clings perfectly to the chicken, creating the signature sticky texture.
  5. Garnish and Serve: Transfer the chicken to a serving dish. Sprinkle toasted sesame seeds and chopped spring onions over the top. Optionally, add a few extra drops of sesame oil (natural) before serving to enhance aroma and flavor.

Notes

  • Patting the chicken dry ensures a better crisp before applying the sauce.
  • Use boneless chicken thighs for juicier, more flavorful results.
  • Do not skip the natural gelling agent; it is essential for the perfect stickiness and shine.
  • Simmer the sauce gently to avoid boiling; this maintains balanced texture and flavor.
  • Toast sesame seeds briefly in a dry pan to bring out their nuttiness.
