Ingredients

Scale

Chicken and Marinade

  • 1 lb boneless chicken breast, trimmed and sliced
  • 2 tbsp olive oil
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tbsp fresh lime juice
  • Pinch of salt

Corn Mix

  • 1 cup fresh corn kernels
  • 1/2 cup chopped red bell pepper
  • 1 tsp olive oil
  • 1 tbsp apple cider vinegar (natural)
  • 1/2 tsp smoked paprika

Base and Toppings

  • 2 cups cooked long-grain rice
  • 1/4 cup plant-based cheese (plant-based)
  • 2 tbsp fresh cilantro, chopped
  • 2 green onions, sliced
  • 1 tbsp fresh lime juice

Optional Dressing

  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp apple cider vinegar (natural)
  • 1/4 tsp natural gelling agent

Instructions

  1. Prepare the Chicken: Trim and slice the boneless chicken breast into thin strips or bite-sized pieces. In a bowl, combine olive oil, vegetarian Worcestershire sauce (natural), smoked paprika, ground cumin, lime juice, and salt. Marinate the chicken in this mixture for at least 10 minutes to infuse smoky flavors.
  2. Cook the Chicken: Heat a skillet over medium heat. Cook the marinated chicken pieces for 5-7 minutes until golden brown and fully cooked, stirring occasionally to prevent sticking. Remove from heat and set aside.
  3. Prepare the Corn Mix: In the same skillet, add a little olive oil. Add fresh corn kernels and chopped red bell pepper. Season with apple cider vinegar (natural) and smoked paprika. Cook for 4-5 minutes until the corn is tender and slightly charred in spots to replicate street corn texture and flavor.
  4. Assemble the Rice Bowl: Spoon cooked rice into serving bowls. Top with the smoky chicken, charred corn and pepper mixture, fresh cilantro, and green onions. Generously sprinkle plant-based cheese (plant-based) over the top. Finish with a squeeze of fresh lime juice for brightness.
  5. Optional Dressing: Whisk together olive oil, lime juice, apple cider vinegar (natural), and natural gelling agent to thicken slightly. Drizzle this dressing over the bowl just before serving for extra flavor.

Notes

  • Marinate the chicken for at least 10 minutes to enhance flavor.
  • Lightly char the corn for authentic flavor and texture.
  • Use freshly squeezed lime juice to brighten the dish.
  • Fluff rice with a fork before assembling for a light texture.
  • Add fresh cilantro and green onions just before serving to keep freshness.
