Instructions

  1. Prepare the Tofu: Start by pressing the tofu to remove excess moisture, then cut it into small cubes. Pan-fry in a little oil until all sides turn golden and crisp, then set aside while you prepare the other ingredients.
  2. Cook the Plant-Based Bacon: In the same pan, cook diced smoked plant-based bacon until it crisps up nicely, releasing a smoky aroma. Remove and keep aside with the tofu.
  3. Sauté Aromatics and Veggies: Add minced garlic and freshly grated ginger to the pan, stirring for about 30 seconds until fragrant. Toss in diced carrots and peas, cooking until tender yet still vibrant, preserving their natural sweetness.
  4. Combine Rice and Sauces: Introduce the day-old jasmine rice to the pan, breaking up any clumps. Stir in vegetarian Worcestershire sauce (natural), soy sauce (natural), and a splash of apple cider vinegar (natural). Keep stirring to evenly coat the rice and enhance every bite.
